Pie Crust

Here is a simple yummy recipe for a good pie crust.

Ingredients:
  • 3/4 of a cup of vegetable shortening
  • 1/4 cup of butter
  • 2 1/2 cups of all purpose flour
  • 1 tsp salt
  • 6-10 tblsp of cold water (8 tablespoon in 1/4 of a cup)
  • 1 egg
  • 1 tblsp of brown sugar
  • 1 tsp of white vinegar (optional, but it helps)
  1. Mix flour, salt, shortening, and butter in a large bowl. Combine with a pasty blade or something else that will do the something. a potato masher works fine. So do hands. Do this until it is all mixed together. Once it is there, stop. you should not overmix because the fat globules in the butter and shortning will break. Instead we want the to break when we put them in the oven so it forms a flaky crust.
  2. Whisk together the water, egg, brown sugar, and vinegar. Whisk until the egg is fully broken up and mixed in with the other stuff.
  3. Put the wet mixture in the bowl with the flower and mix. I find that this is to hard to do with a tool so I just use my hands for this part. when all mixed together put it in the fridge and with plastic wrap over it for at least fifteen minutes be you use it. If you have left overs, it freezes very well.
  4. roll about half of it into the right size for you pie and a floured surface with a floured rolling pin.
  5. Now the hard part of transferring it from you counter to the pie plate. I find that it works best if you roll it up around the rolling pin and then unroll over top of the pie dish. Poke the bottom with holes from a fork to prevent bubbles.
